Kandahari Abjosh raisins are cultivated using centuries-old viticulture in the arid, high-mineral soils of Kandahar. Freshly harvested elongated seedless grapes are dipped briefly in boiling mineral water (the ancient "ab-josh" technique) and hung in naturally ventilated adobe drying houses known as Kishmish Khanas. This artisanal method retains the translucent honey-golden hue and locks in rich grape sugars, polyphenols, and iron without sulphur dioxide treatment. Juicy, soft, and remarkably fragrant.
